A Visit to the Bakery: Shalma Street, Tel Aviv Tour
On the strip of Shalma Street, on the seam connecting Florentine and Jaffa, are some of the city’s best and most unique bakeries, which are true culinary gems. We will skip between three points, each of which has a fascinating story of creativity and entrepreneurship, of past traditions alongside innovations that are part of local culture and Israeli cuisine, and we will talk about the significance of challah and bread in regards to Judaism and Israeliness, in ceremony and popular culture.
We will visit a bakery connected to local agriculture and traditional baking processes; we will continue to a bakery that combines European tradition with seasonal cuisine and innovation; we will meet a baker who revives ancient wheat varieties, in whose work researchers, farmers, millers and bakers unite; and we will end with a colorful, happy, sweet pop-up that takes challah to the extreme. We will taste special challahs–like the goat’s milk and Rebbe’s challahs–as well as special dips and pickles, cheeses, olive oil, honey and more.
The tour will be led by David Kichka – culinary entrepreneur, Chairman of the Israeli Association for Culinary Culture, driving partner of the Israeli Cuisine Festival and Awards, culinary director and producer, culinary tourism developer, writer, lecturer and teacher.
